It was fun to experiment with this one, but I think I finally got it right. It’s really quick and easy. If you pre-refrigerate the sweetened condensed milk and graham cracker crust the pie will set up in about 2 hours, otherwise, it will take about 6 hours.
1 can sweetened-condensed milk
1/3 cup lemon juice
1 tsp vanilla
12 ounces whipped cream cheese
1-8 ounce tub of Cool Whip
1 “Extra Serving”size graham cracker crust
In a large bowl, whisk together the sweetened-condensed milk with the lemon juice and vanilla. Add the cream cheese and mix until smooth. Fold in the Cool Whip until well combined. Turn the mixture out into the graham crust and spread evenly.
Chill until set. Serve plain or with fruit, as you would any other cheesecake.
